I’m a freshman in college studying Civil Engineering who is just about to start an internship with an engineering company. My end goal is to own my own engineering firm. I plan to intern every summer so my question is should I stay and intern at this same company every summer until I graduate or should I look for other companies in other disciplines to intern with?

Hi there and welcome to the Forum :-) I think you're on the right track get some experience under your belt and start a company however nowhere where you intern working for someone else as an intern in engineering will they teach you how to start your own business. You will most likely need to create your business and then ask questions during your internship on how to scale your business and what worked for them and what didn't.
Because businesses are selfish, they don't want to breed competitors ;)
